這些均勻散佈在咖啡豆表面的“油”,事實上並不是“油脂”,而是一種看似油脂的水溶性有機物質。“咖啡油”本身包含許多咖啡芳香成分,可以在水中溶解,因此你煮好的咖啡表面並不會飄着一層油膩膩的油脂</div>

烘焙火候較淺、外觀呈現淺棕色調的“淺焙豆”,在烘焙後外表乾燥,並不會出油。約在出爐五天左右(高溫盛夏時可能縮短至一兩天)便開始出現“點狀出油”現象(咖啡豆的某側出現點狀的油滴)請注意:少許的“點狀出油”並不代表不新鮮,有時反而是淺焙咖啡豆風味在最頂峯的狀態。繼續擺放下去,出爐超過兩週後,淺焙豆表面逐漸泛起一層均勻、薄亮的油光,聞起來氣味不是香甜味,而帶有油耗味,此時“淺焙豆”的風味已走下坡,應該避免購買。</div>

●不新鮮的深焙豆</div>

烘焙火候較深、外觀呈現深棕色調的“深焙豆”,在烘焙後外表便呈現微微油光,出爐第一天至第二天表面便開始大量“出油”。外表油亮亮的“深焙豆”非但不代表不新鮮,相反地,深焙豆在出爐三週後外表油光將逐漸幹掉,最後變成外表乾燥的走味豆。因此,若看到外表乾燥不油,但外觀呈現深棕色的咖啡豆,請特別注意其是否標示烘焙日期,極有可能是已經變質的走味豆。</div>

●判斷咖啡豆新鮮度的方法</div>

即使是已經不新鮮,外表出油的“淺焙豆”,在長時間(如三個月)擺放之後外表也將逐漸幹去,最後迴歸乾燥不油的外觀。由此可見,外表是否出油,只是判斷咖啡豆新鮮度的一個參考,而非絕對。</div>

●我們應該如何判斷咖啡豆的新鮮度?</div>

首先,請向產品有清楚標示日期、有品牌信譽、強調新鮮烘焙的專業咖啡烘焙業者選購。此外,優良的咖啡包裝袋通常有“單向排氣閥”(在咖啡袋上方的鈕釦狀小孔)設計,供咖啡豆排出天然產生的二氧化碳。將單向排氣閥對準鼻子,輕輕擠壓咖啡豆袋,聞擠出來的氣體味道,如果是迷人香濃的咖啡香氣,則新鮮度尚無問題,反之,若聞起來不夠香濃,甚或帶有臭油味道,則表示這包咖啡早已變質走味,應避免購買。</div>
