有想過您杯中香氣誘人的咖啡是怎麼來的嗎？一顆咖啡果實要經過重重關卡，才能順利變身爲熱騰騰的咖啡，送到你的手中。首先是產地端的栽培、種植、收成和果實處理，接著是中間商的生豆交易、烘焙和零售，最後纔是消費端的研磨、衝煮與出杯。經過上述這些程序，鮮紅色的咖啡果實這才變成一杯香氣四溢的咖啡，送到您的手中。而這一連串繁雜的流程就是所謂的“<a href="http://www.gafei.com/gongying/">咖啡供應鏈</a>”。</div>

烘焙的利潤</div>

對於一般的消費者而言，“烘焙”是一個似近又遠的名詞，我們都清楚咖啡豆需要經過烘焙，但卻很少能真正的接觸到烘焙這個產業。而事實上，烘焙是整個咖啡供應鏈所有制程之中，毛利率最高的環節，根據ICO（國際咖啡組織）的調查，這些烘豆業者的平均毛利率高達51%，全球咖啡烘焙業的年產值高達7500億新臺幣。</div>

而烘焙業者的利潤到底有多高呢？若我們將全球咖啡產業的利潤，簡化到10塊錢，那麼種植者可以得到1塊錢，出口商也可以分到1塊錢，零售業者則可以得到3塊錢；而烘焙商，卻可以獨拿五塊錢，是全球咖啡產業利潤的50%。</div>

烘豆產業還有一個特色，那就是進入的門檻極高，他們必須維持一定的生豆及熟豆存量、承擔烘豆過程中豆子的損失，且熟豆的風味會因爲時間而改變，這讓商品分配、物流管理也是非常重要的問題，若沒有相當的財力是很困難的。</div>

而且烘豆商從購入咖啡生豆到將咖啡熟豆或相關產品售出，通常需要1——6個月的時間，因此，烘豆業者需要有非常充裕的資金，才能度過這漫長的現金週轉天數。爲了籌得資金，這也讓烘豆業者必須大舉借債，其平均財務槓桿高達二，換句話說，這些烘豆業者50%的息前稅前盈餘都要拿去償還債務的利息。</div>

儘管如此，烘豆業相當豐厚的利潤，仍然造就了許多咖啡巨獸，全球的前十大烘豆商提供了全世界40%，相當於345萬噸的咖啡豆。十大烘豆業者如下表，前三名烘豆商都是龐大的食品集團。</div>

事實上，包括雀巢、UCC在內，前十大烘豆商之中有許多都有經營自己的咖啡品牌，販售即溶或罐裝咖啡。市面上常見的即溶咖啡大多也都是烘豆商集團下的產品之一，雀巢即溶咖啡在超過180個國家銷售，其銷售額就佔了全球市場40%，2015年全球即溶咖啡的零售金額超過9300億新臺幣。</div>

喜愛現煮咖啡的你是否懷疑爲何即溶咖啡的市場仍有如此大的賺頭？隨著第三波咖啡浪潮興起，消費者對咖啡的喜好的確有明顯改變，但即溶咖啡的方便度是無法取代的，加上咖啡新興市場（例如：中國和印度）對於即溶咖啡的需求暴增，支撐了即溶咖啡市場的銷售量。</div>

星巴克也在前十大烘豆商的排行榜之中，這或許會讓許多人感到訝異。星巴克是全球咖啡零售業的巨擘，也是世界上最大的連鎖咖啡廳，在全球有超過20,000家分店。擁有如此龐大的咖啡通路，這讓星巴克的烘豆量大增，而烘豆同時也正是星巴克的本業。</div>

總體而言，這些烘豆商完成了屬於自己的、一條龍式的“<a href="http://www.gafei.com/gongying/">咖啡供應鏈</a>”，從產地、烘焙、加工到最後的零售，都掌握在自己的手中，幾乎獨佔了所有的利潤，就曾有人形容這些烘豆商就像吸血鬼一樣，吸乾了咖啡產業的每一塊錢。</div>

公平貿易咖啡豆</div>

由前文可知，烘豆商在咖啡供應鏈中賺取不少的利潤，甚至也做起了零售生意，但他們的上游供應商，已就是咖啡農，卻沒有因此得到更好的生活品質。當公平貿易的議題吵的火熱，烘豆商就會被冠上剝削農民的罪名。</div>

而且近年來氣候變遷使咖啡產量減少，烘豆商需要大量穩定豆源，不少業者除了承諾購買公平貿易咖啡豆，紛紛提出回饋農民永續計畫。例如雀巢的創造共享價值，其中包括直接向農民以保證價購買原料，少了中間商經手，農民可以獲得更高利潤，雀巢也能享有固定的原料供應。還有提供農民技術上的協助，使農民得以提高效率及商品品質。以上或許只是爲了回應企業社會責任，但實際上也爲農民和烘豆商創造雙贏的局面。</div>
