<a href="https://www.gafei.com/gongying/20180311116185.html">咖啡豆保存</a>新鮮度影響要素主要有四個:空氣、溼度、陽光和溫度。比起歐美乾燥涼爽的大陸型氣候,臺灣常又溼又熱,對於<a href="https://www.gafei.com/gongying/20180311116185.html">咖啡豆保存</a>實在是一大挑戰,也需要更多的注意與呵護。當咖啡豆與空氣中的氧氣接觸時,會大大地加速咖啡豆的老化。高溼度的地方對於咖啡豆的存放也是一大挑戰,故咖啡豆不適合存放於冰箱或冷凍庫之中,因爲一旦從低溫的空間移至高溫處,咖啡豆表就會開始產生水氣,讓咖啡的品質惡化。陽光的直射也是咖啡豆的殺手之一,所以咖啡豆如果存放在透明的密封罐中,請記得將它收到陽光照不到的櫥櫃之中。咖啡豆在衝煮之前不應處於高溫的環境,原因是高溫會導致咖啡發散芳香分子,沒過幾天你的咖啡就會失去大半香氣,將不再迷人了。綜合以上所述,應該將咖啡豆存放於具單向排氣閥的密封袋、乾燥、陰暗及涼爽之處,用以減緩咖啡豆老化的速度。</div>

可以選擇的話,玻璃材質的會比塑膠的容器來得更好。最好依照咖啡的種類分開來存放,即使咖啡味道相似的也儘量不要放在同一個塑膠容器裏,因爲這樣會讓咖啡原有的香氣混合在一起,之後要再衝製出有原來味道的咖啡就很困難了。</div>

相反地,玻璃容器沒有氣體外泄的現象,所以即使把不同種類的咖啡放在一起,只要依照順序排列放好,要用之前好好地將咖啡豆清洗過,還是可以將原有的味道保存下 來。另外就是保存咖啡時,將原本裝咖啡的整個袋子一起放進容器,這樣下次要換放別的咖啡時,很方便就可以替換了。</div>

很多咖啡愛好者都喜歡挑自家烘焙店的豆子買,但是看到店內滿地的麻布袋感覺很專業?其實咖啡生豆的品質在這幾年開始被重視,也因爲之前的咖啡豆含赭曲毒素才讓大家開始有了對生豆保存的重要觀念,當然有些店家認爲銷量大不需增備恆溫溼箱,但生豆就算沒有產生素,生豆的含水量也會改變,再經由高溫烘焙時所出現的香氣,也就大大的減弱嚕....當然它也是新鮮烘焙的!</div>
