	　　據美國雅虎新聞網5月30日報道,幫助英國咖啡師麥斯韋爾?卡隆納?達修德(Maxwell Colonna-Dashwood)贏得&ldquo;世界最佳咖啡師&rdquo;稱號的英國巴斯大學化學家克里斯?亨頓(Chris Hendon)指出，水纔是創造一杯完美咖啡的祕訣。</p>

	　　亨頓說，煮咖啡也許是世界範圍內最普遍的化學提取過程。爲英國皇家學會化學院執筆的亨頓在談到&ldquo;水&rdquo;這一話題的時候寫道：&ldquo;不同類型的水可使咖啡豆呈現不同的味道，這種味道有時好有時壞。&rdquo;</p>
<p>
	　　就這一點，美國咖啡協會也稱，水在煮咖啡的過程中扮演着非常重要的角色。如果你家的自來水水質不好或夾雜着很強的氣味的話，煮咖啡時最好還是用蒸餾水或瓶裝水。若家中只有自來水，那就讓自來水流幾秒鐘後再用。不過需注意的一點是，煮咖啡時一定要用冷水。</p>

	　　爲什麼水會對咖啡的味道有如此重大的影響呢?根據巴頓的說法，原因在於不同的水中有不同的離子組成，而世界各地的水不盡相同，故而會影響咖啡的味道。</p>
<p>
	　　巴頓和他的團隊已經運用原子吸收分光儀測試了不同水質的離子成分和水平，幫助麥斯韋爾贏得了國家級咖啡競賽。這也許也是一場&ldquo;科學的勝利&rdquo;。</p>
