徐志摩筆下的法國巴黎，是一個總能在街頭巷弄尋得一處咖啡館的巴黎；是一個晚上有著喝不完的咖啡杯的巴黎。想像的巴黎，似乎只要漫步於街上，就總能在空氣中聞得濃濃的咖啡香。這種想像並非只存在於徐志摩筆下，當代東亞城市中，最會“想像巴黎”的，莫過於首爾。臺灣7-ELEVEN廣告標語“整個城市，就是我的咖啡館”用來形容深入臺灣各個角落的便利商店就像咖啡館提供現做咖啡。同樣的標語倘若放在首爾或許更是貼切，甚至可以進一步說：首爾的咖啡文化，或許早已超越了“想像的巴黎”。</div>

首爾如何想像巴黎、想像法國文化？從城市地景及都市文化切入觀察，是一個容易進入的參照點。漫步在首爾街頭，幾乎可以輕易地在每一個街區發現好幾間咖啡館，咖啡館的密度很高，在首爾生活，去咖啡館幾乎就和臺灣人去便利商店一樣容易、一樣頻繁，而這些咖啡館一致的帶著強烈的西方現代性佇立於城市中，很大一部分的咖啡館甚至以“法文”爲店名，試圖與法國意象連結，其他還有爲數不少的麪包店及餐館，結合其他符號意象，如法國國旗、配色（藍、白、紅）、埃菲爾鐵塔等具體形象呈現於地景上。其中，最極端的例子，是位於首爾近郊的小法國村“쁘띠프랑스”，該區是以法國童話小說《小王子》爲背景打造出的童話村落。然而，無論是咖啡館、麪包店或者小法國村，首爾想像的巴黎停留在“文化符碼”層次，從咖啡、建築設計及裝飾與巴黎、法國連結。</div>

城市地景之外，我們還可以觀察首爾如何與地景中充滿“法國性”的符號互動，進一步理解這座城市的都市文化。首爾的空氣沒有徐志摩筆下描寫巴黎的浪漫隨處飄著咖啡香，這也許只是文學作品筆下的浪漫。然而，首爾街頭巷弄四處可見各種型態的“廣義的咖啡館”大概不比巴黎少。爲什麼首爾需要這麼多咖啡館？咖啡館這樣的空間具有什麼特殊意義，如何和當地人互動？首爾想像的巴黎，也就是說城市中的異國性（exotic）如何在城市作用？</div>

咖啡文化根植首爾，喝咖啡幾乎是多數人日常生活的一部分。除了比鄰社區的咖啡館，韓國麪包店、糕餅店往往也以結合咖啡館的形式出現，販售咖啡之餘，店面提供座位供消費者使用。從咖啡文化到地景的再現，都不難發現首爾對法國文化及西方現代性、優質生活的崇尚。</div>

“咖啡空間”除了是韓國人享受點心的休閒空間，更深層的意義，是咖啡館之於社區鄰里間的社會功能。在首爾《社區共同體事業[1]》計畫中，咖啡館是舉辦社區講座與慶典等各種活動的社區交流空間，這種以社區咖啡館爲中心的社區營造計畫，爲現代城市中普遍的人際互動疏離尋得新的出口，改善了城市居民之間的關係。</div>

比較臺韓兩地的咖啡文化事實上有很大的差異。在臺灣，便利商店咖啡是“庶民的咖啡”及“外帶的咖啡”；咖啡館相對昂貴，其空間可以是提供朋友聚會的功能空間、也是自由業者的工作／休閒空間。普遍來說，“上咖啡館”是相對高消費的行爲，並不是常民生活的一部分，而是排除特定社會階級的消費空間。咖啡館也不像在首爾一樣，具有凝聚社區意識的功能。</div>

當咖啡空間進入常民生活文化後，連帶地影響韓國餐飲業。除了前述提及的麪包店（如Paris Baguette及Tous Les Jours）之外，韓國在地甜品店（類似臺灣剉冰店）也成爲另類咖啡空間，販售冰品同時也需要提供讓消費者能夠久坐的空間，並且這類空間多半如咖啡館般也提供電源插座使用[2]。也因爲這類空間對韓國人的重要性，臺灣手搖杯業者貢茶（gong-cha）、歇腳亭（share tea）在進入韓國時，也轉換在臺灣“帶著走”（take-away style）的特性，店面均實驗地模仿咖啡空間提供內用座位，形成臺韓法文化混種（hybridity）的有趣現象。</div>

臺灣和韓國的發展歷程有許多可以相互參照之處，在亞洲各國經濟快速成長下，近年臺韓兩國均發展出不同於80、90年代因生產成本、勞動成本壓力推動的勞力密集產業轉移現象，當代臺韓兩國的三級產業都因爲他國消費力提升，主動的轉移產業至他國（尤其以飲食爲多）的現象。這與上一個時代的產業轉移（Industrial Transfer）有所差別，過去的轉移是“去文化”（deculturalization）的，僅關注產業結構、勞動力素質及成本。</div>

然而，正如同臺灣手搖杯轉移至韓國的例子，當代產業轉移背後有更深層的文化轉移（cultural transfer）過程，這當中需要面對的是產業在轉移前／後，母國及他國的文化脈絡，進而產生哪些文化特性可以被轉移？轉移過程文化如何轉化／需要轉化嗎？以及轉移後如何與在地文化作用等複雜問題，或許是臺韓兩國經濟發展的重要關鍵，值得我們進一步思考。</div>

首爾“社區共同體事業”可以理解爲類似臺灣的“社區營造計畫”。“社區共同體事業”是居民主導的事業，由居民親自執行並推動社區事業提案、訂定計畫、事後管理等事業的所有過程。針對協助居民尋找社區當前面對的問題與共同關心項目，讓社區共同體得以成形的一切活動提供教育、輔導、諮詢等綜合性支援。</div>

在現代咖啡館中，能夠“久待”的重要條件是網絡與電源供應，因爲現代消費者在咖啡空間中除了閱讀之外，筆記型電腦、手機要隨時隨地使用都是很耗電的。</div>
